Early harvested oil is obtained during the period known as veraison, which is the moment when the olive´s color evolves from green to purple. The olive is harvested just before it becomes fully ripe. To avoid damaging the fruit during this especially delicate phase, the harvest takes place during the coldest hours of the day.
